One of my goals is try and eat a nice big green salad every day. But I hate buying big bottles of dressing that are full of who knows what kind of preservatives and fillers so they can keep on a grocery store shelf for months or years. So every time I have a salad I have decided to experiment with a new way to dress it. Today I felt like something a little sweet so I made a balsamic vinaigrette using hemp seed oil which has 2500mg of omega 3 per TB, and seasoned with white miso and sweetened with raspberry preserves.
I started with a bed of mixed greens topped with pea shoots, pecans and dried cranberries.
In a small bowl add
1tsp raspberry preserves
1TB balsamic vinegar
1tsp white miso
Whisk in
2 TB hemp seed oil
continue to whisk until it emulsifies (makes 2 servings)
