
1 cup steel cut or Irish Oats
4 cups water
1/4 cup raisins
1/4 cup pistachios
5-6 cardamom pods
2 pieces star anise
1 tsp cinnamon
1 cup coconut milk
20 drops liquid stevia "vanilla creme" flavor (optional)
Cook the oats, spices, nuts and raisins according to the package directions. I used the rice cooker on the timed porridge setting overnight. After oats are cooked, remove the star anise and the cardamom pods and stir in the coconut milk and stevia. Any kind of milk or nut or soy milk may be used instead of coconut milk. Brown sugar or honey could also be used instead of stevia, or you may like it without any sweetener at all.
