Tofu Dill Dip
1 block of firm tofu
1/4 cup of fresh coarsley chopped parsely
1/4 cup fresh coarsley chopped dill
1 tsp sea salt
3 Tb lemon Juice
2-3 Tb vinegar
3 Tb olive oil
This recipe is rough as I measured everything to taste. Feel free to add more vinegar or lemon juice if you want more flavor, and add more oil for a creamier concistancy. I added everything except the herbs to the vitamix, and increased the speed from low to high as I used the tamper to make sure it blended well. I then turned it to variable low around 4 and added the herbs, and pushed with the tamper until everything was incorporated. I think a food processor would work well if you do not have a vitamix.
