Best Vegan Queso Dip

1/4 cup cashews
1/2 cup cooked butternut squash
1 Tb lemon juice
1/4 cup roasted red peppers, or pimentos
1/2 milk alternative such as soy, almond, or hemp
2 Tb hemp seeds
1 clove garlic
2 Tb nutritional yeast
1Tb arrowroot powder
1/2 tsp chili powder
1/2 tsp salt

Add all ingredients into the blender and then blend until smooth. Then place in a pan and heat on low stirring constantly until it thickens.

This is my second attempt at queso using butternut squash and I think that this recipe is much better tasting than the version I made last week. I think it is a winner!
I devoured this in seconds with Jalapeno flavored Farmboy Tortilla Chips made with heirloom corn from the Simmons family farm!
